  1. Rub the inside of a fondue pot, small crock or cast iron skillet with the garlic clove.
  2. Warm the wine in the pot. Add the cheeses, cornstarch and lemon juice. Cook over medium-heat, stirring occasionally, until the cheeses begin to melt, about 5 minutes.
  3. Reduce heat to low. Add nutmeg and cook, stirring gently, for another 3 minutes. Serve with bread, salami, pears and apples.

Recipe Tip

Emmentaler cheese can sometimes be difficult to find. Gouda cheese or Fontina cheese may be substituted for the Emmentaler, if desired.

How to make Savory Nuts:

  1. Preheat the oven to 350°F.
  2. Spread nuts in a 13x9x2 inch baking pan.
  3. In a small bowl, stir together Worcestershire sauce, olive oil, thyme, rosemary, salt and red pepper. Drizzle oil mixture over nuts; toss to coat.
  4. Bake 12 to 15 minutes or until nuts are toasted, stirring occasionally. Spread on foil to cool.
  5. To serve, transfer to serving bowl. Store in an airtight container.

Recipe Tip

Watch the nuts closely while baking. Nuts can go from toasted to burnt pretty quickly, and you definitely don’t want to ruin an expensive batch of nuts!

Substitutions:

The great thing about this recipe for savory nuts is that you can use any nuts that you want (or the nuts that are on sale!) Use any mix of almonds, cashews, pecans, walnuts… whatever you like best.

These Artichoke Stuffed Mushrooms are the best stuffed mushroom hot appetizer recipe with a delicious filling.

I have a story about these stuffed mushrooms. I found the recipe in a magazine at a Dr.’s office a couple of years ago. In true RecipeGirl fashion, I tore it out of the magazine and brought it home with me to try. I messed with the recipe a bit. And I served it at a dinner party. Everyone loved them and couldn’t stop talking about them.

I lost the recipe, and then I found it again and made these artichoke stuffed mushrooms for our holiday party last year. I can’t even explain how popular they were. Everyone wanted the recipe. They really are delicious!

How to make Artichoke Stuffed Mushrooms:

  1. Preheat the oven to 425℉. Line a large baking dish with foil, and spray with nonstick spray.
  2. In a large skillet over medium-heat, heat the oil and add the onion; cook and stir for about 5 minutes. Stir in the salt and pepper. Transfer the mixture to a large bowl. Stir in the artichoke hearts, cream cheese, Parmesan cheese, sour cream and garlic salt.
  3. Stuff the mushroom caps with the artichoke mixture; arrange in the prepared baking pan. Bake until the mushrooms are tender and the filling is hot and bubbly, 17 to 20 minutes.

Serving Tip:

If serving these for a party, I’ll share how I kept them warm. I bought this really cool warming tray (which happens to be good for other things too). And then I bought two of these square baking pans. I ended up baking the artichoke mushrooms in the pans, and then it was super easy to just transfer the pans to the warming trays from the oven. It worked so well that I’ve used the same idea for other appetizers too!

Make ahead:

It’s easy to prep ahead of time. Clean the mushrooms, make the filling, and fill the mushrooms. Pop them into the oven when ready to bake!

Gougeres are classic French cheese puffs made with Gruyere cheese that are light and airy and delicious. They’re a great appetizer!

Gougeres

A gougère in French cuisine is a baked savory choux pastry made of choux dough mixed with cheese. The cheese used is commonly grated Gruyère, Comté, or Emmentaler.

Gougères are said to come from Burgundy. They are generally served cold and often used as a munchie when tasting wine in cellars, but they are also served warm as an appetizer.

🛒 Ingredients Needed:

  • unsalted butter
  • water
  • milk
  • sea salt
  • ground nutmeg
  • all purpose flour
  • eggs and egg yolk
  • shredded Gruyere cheese

  1. Preheat the oven to 400℉. Line a rimmed baking sheet with a silicone baking mat or a buttered sheet of parchment paper.
  2. In a large stainless-steel saucepan over medium-high heat, combine the butter, water, milk, salt and nutmeg. Bring to a rapid boil, stirring to combine as the butter melts. Reduce the heat to medium and, using a wooden spoon, stir in the flour all at once. Cook, stirring constantly, until the dough dries out slightly, about 1 minute. This is important- excess moisture will cause your puffs to collapse. Remove the pan from the heat and let the dough cool for 5 minutes.
  3. Stir in the eggs, one at a time, until fully incorporated before adding the next. You can mix in the eggs with a mixer, food processor or a wooden spoon. Beat in all but 2 tablespoons of the Gruyere.
  4. Place the dough in a pastry bag fitted with a ½-inch plain tip and pipe golf ball-size puffs onto the prepared baking sheet.
  5. In a small bowl, whisk together the egg yolk and water. Brush the tops of the puffs lightly with the egg wash, sprinkle with the remaining 2 tablespoons of Gruyere, and bake for 20 minutes.

Reduce the oven temperature to 350℉ and continue baking until golden brown and dry, about 20 minutes. Cool on a wire rack. Eat warm or serve later. They will keep at room temperature for a few hours. Reheat in a 375℉ oven for 5 minutes before serving.

➡️ Tips and Substitutions:

  • Feel free to experiment with using different cheeses. Comté, Emmentaler, cheddar or Parmesan are recommended.
  • When making the choux, cook the dough until it pulls away from the sides of the pan and forms a smooth, cohesive ball. This ensures the dough will rise properly in the oven.
  • Don’t open the oven door during the first 15 minutes of baking, as this can cause them to deflate.
  • Add fresh herbs like chives or thyme, or spices such as paprika, garlic powder, or black pepper to the dough for extra flavor.

This Baked Brie with Blueberry Sauce has summer written all over it! It’s perfect for a backyard barbecue in the middle of July. The sweetness of the blueberries marry very well with the brie.

Baked Brie with Blueberry Sauce

I created this recipe a few years ago, and I’m re-sharing it with you today. I was staying in a beach house in Massachusetts, where I got the inspiration for this recipe because of the inexpensive blueberries that I kept coming across at all of the summer farmer’s markets.

Where can you find a round of brie?

More often than not, brie is sold in little wedges that you’ll find in the gourmet cheese aisle at your grocery store. That’s not what you need for this recipe. Sometimes you’ll be able to find rounds of brie in your grocery store too, but they’re usually kind of expensive at a regular grocery store.

I suggest you look at Costco, Sam’s Club or Trader Joe’s for an 8-inch round brie. That’s the perfect size for this recipe.

How to make blueberry sauce:

To make the blueberry sauce, fresh blueberries are simmered with brown sugar, shallots, cider vinegar, ginger, a touch of cinnamon and cornstarch to thicken. The blueberry mixture is then spooned on top of the warmed brie.

Blueberries are abundant on the Northeast coast of the US. You can find them in the markets pretty easily on the west coast, but nothing beats the blueberries that you come across in New England. They’re BIG and juicy little buggers, and they’re cheap as can be.

Served up with crackers or baguette slices, this blueberry brie makes a terrific, summery appetizer. Every bit of this amazing dish will be gobbled up- brie scraped down to the rind and plate practically licked clean of any trace of blueberry.  Guaranteed!

Instructions

  • Combine all ingredients (except brie) in a large saucepan. Bring to a boil over medium heat, and cook 2 minutes. Remove cinnamon stick. Cover and chill blueberry mixture until ready to use (or let sit, covered, at room temperature for up to one hour).
  • Preheat oven to 350℉.
  • Place brie round on baking sheet or in a baking dish. With a sharp knife, cut through rind around the top edge of the brie (just make a cut into the top layer of the brie all the way around, but don’t remove it). Bake 15 minutes, or until cheese is soft and melted. Carefully move hot brie to a serving plate. With a sharp knife, carefully cut under the top of the brie (under the rind) and remove. Top the brie with the blueberry mixture, and serve with baguette slices or crackers.

Notes

  • *If chilling the blueberry mixture, be sure to take it out of the refrigerator and let it lose some of its chill before placing it onto the hot brie.

Mexican Cheesecake Dip

There’s no question that cheesecake is my favorite dessert. But trying out a savory cheesecake recipe was a fun experiment on this cheesecake lover. This dip may absolutely be made a day or two ahead of serving. Wrap the cheesecake well with plastic wrap and refrigerate. Defrost, and then spoon the salsa on top right before serving.

Caramelized Onion Dip

Caramelized onions are pretty delicious. They’re sweet and creamy and they add so much flavor to recipes. Adding them to a classic onion dip is a great idea. You won’t be able to stop dipping chip after chip into this fabulous tasting caramelized onion dip.

  • sour cream
  • mayonnaise
  • garlic powder
  • white pepper

  • red pepper flakes

In a large skillet, heat the olive oil over medium-heat. Add the onion and ¼ teaspoon of the salt. Cook, stirring every so often, until the onion begins to caramelize and turn golden brown, about 30 minutes. Don’t stir the onions constantly because you want them to brown, but do watch that they aren’t browning too quickly or burning and adjust the heat as needed. Remove the onions from heat and set aside to cool.

In a medium bowl, mix the remaining ½ teaspoon salt, the sour cream, mayonnaise, garlic powder, white pepper, hot sauce and red pepper flakes, and then add the cooled onions. Taste and adjust seasoning, adding additional garlic powder, salt and/or hot sauce, as desired. Refrigerate until ready to serve. Stir before serving. Serve with sturdy potato chips.

➡️ Tips and Substitutions:

  • Don’t use regular onions. Use sweet onions like Vidalia or Walla Walla for the best flavor. They caramelize beautifully and have a mellow sweetness that complements the dip perfectly.
  • Allow the caramelized onions to cool completely before mixing them into the dip. This prevents them from releasing excess moisture and making the dip watery.
  • You can substitute Greek yogurt for the sour cream. Please note that it will have a bit of a different flavor. I suggest experimenting with adding half Greek yogurt and half sour cream.

  1. It’s a great make-ahead dip. When given a chance to chill in the refrigerator for a couple hours or more, the flavors have a chance to meld together.

Greek Crostini

I make this recipe quite often when I need an easy appetizer for a gathering with friends. It’s always well-received because pretty much everyone likes hummus. And it’s more delicious than just putting out a container of store-bought hummus with some vegetables!

PREPARE THE HUMMUS:

Mango, Black Bean and Goat Cheese Quesadilla

This isn’t your everyday, plain-old cheese quesadilla! Instead, there are great things added in that make it a fantastic snack or appetizer. I like to make it for a light dinner alongside a salad when I don’t have to feed anyone else!

  1. Coat both sides of the tortillas with cooking spray. Place one tortilla in a hot skillet to brown. Flip the tortilla and add the cheese, mango and beans on half of the tortilla; fold the tortilla over to cover the ingredients. Cook until the tortilla browns, then flip and cook the other side; remove the tortilla to a cutting board.
  2. Repeat with the second tortilla and remaining ingredients.
  3. Cut each tortilla into 4 wedges and serve immediately.

  • In the summertime, substitute fresh peaches for the mango- yum!

Vegetable Goat Cheese Spread

This is an easy-to-make dip that is perfect to bring to a party. It’s much more delicious than a store-bought dip. It’s a nice change from the always-favorite spinach artichoke dip. My curry dill dip is another favorite. But I love this vegetable goat cheese spread because it’s full of crunch and fresh flavor!
