The best thing about eating healthy is that there is a variety of stuff out there that you can put together for a great meal. This isn’t a terribly low calorie salad or anything, but it sure does have many of the colors of the rainbow. Eating the rainbow is apparently the focus of a healthy diet!

  • quinoa
  • lemon
  • crumbled feta cheese
  • extra virgin olive oil
  • salt
  • dried oregano
  • romaine lettuce
  • canned chickpeas
  • mini sweet peppers

How to make Greek Quinoa Chopped Salad:

  1. In a medium saucepan, bring the water and quinoa to boiling; reduce heat. Simmer, covered, 15 minutes or until the water is absorbed. Spread the quinoa on a large baking sheet to cool.
  2. Meanwhile, for the dressing, remove 2 teaspoons of zest and squeeze ¼ cup of juice from the lemon. In a small bowl, whisk together the lemon zest and juice, cheese, oil, salt and oregano until combined.
  3. In a large bowl, combine the lettuce, chickpeas, sweet peppers, cucumber, roasted peppers, olives and red onion. Add half the dressing; toss to coat. Return the quinoa to the saucepan and drizzle with the remaining dressing; toss to coat. Combine the quinoa with the romaine mixture and top with crushed pita chips. Drizzle with additional oil, if desired.

Why do you rinse Quinoa?

Rinsing quinoa is important to remove its natural coating, called saponin. Saponins are bitter, so rinsing helps eliminate this taste, making the quinoa more palatable. Additionally, saponins can sometimes cause digestive discomfort, so washing them off can also improve digestion.

To rinse quinoa, simply place it in a fine-mesh strainer and run cold water over it for 30 seconds to a minute, swishing it around gently. While some pre-packaged quinoa may be labeled as pre-rinsed, it’s still a good practice to rinse it again to be sure.

  1. It’s filling enough to be a main dish for dinner (especially if you add some cooked chicken).
  2. It’s light enough to have for lunch!

Spotted in an old Bon Appetit magazine, this French Goat Cheese Salad is full of goodies: green beans, walnuts, tomato, and avocado with vinaigrette and goat cheese croutes.

French Goat Cheese Salad

In France a salad is usually simple mixed greens with a vinaigrette. The addition of green beans, avocados and goat cheese would be a bit crazy in France, but the goat cheese croutes are very common to serve with a French salad.

🛒 Ingredients Needed:

  • sherry vinegar
  • freshly squeezed lemon juice
  • Dijon mustard
  • walnut oil or olive oil
  • haricot verts (thin French green beans)
  • French bread
  • log of goat cheese
  • Bibb (butter) lettuce
  • red leaf lettuce
  • avocado

✏️ How to make French Goat Cheese Salad

PREPARE THE DRESSING:

In a bowl, combine the vinegar, fresh lemon juice and Dijon mustard. Gradually whisk in the oil. Season the salad dressing to taste with salt and pepper. (Can be prepared 1 day ahead- cover and refrigerate.)

ASSEMBLE THE SALAD:

  1. Meanwhile line the plates with alternating Boston and red lettuce leaves. Mound the green beans in the center of the leaves.
  2. Bring a pot of salted water to boil. Add the green beans and cook until just tender, about 4 minutes. Drain and refresh with cold water, then drain again. (Can be prepared 1 day ahead. Cover and refrigerate.)
  3. Preheat the oven to 400°F. Place the bread slices on a baking sheet and bake until golden, about 5 minutes. Top the bread with cheese. Bake until the cheese softens and is heated through, about 10 minutes.

Cut the avocado into thin slices and fan around the beans. Place the cheese croutes on one side of the salad. Garnish with tomato wedges. Drizzle with vinaigrette and sprinkle with walnuts.

Recipe Tip

Look for haricot verts at your local Costco. I always spot them there! Otherwise, in the U.S., they usually have them in a little packet where they have other ready-cut types of vegetables.

❤️ What I Love About This Recipe:

  1. This here is no average salad. My family thinks it’s crazy-good!
  2. It would make a nice main-dish salad with all of these great additions. I serve it with some grilled chicken, and we are perfectly satisfied… and stuffed.
  3. The dressing is a simple one- a sherry vinaigrette with lemon and dijon. It works.

It’s not really typical to make a salad that is entirely focused on avocados, but here we are! If you have access to some really great avocados, this is such a delicious salad to make. It’s definitely a salad for avocado lovers!

  • Don’t use over-ripe avocados for this recipe. You really want to use avocados that are firm, but ripe.

✔️ How to tell if an avocado is ripe:

A ripe avocado will yield very lightly to pressure when squeezed. It’ll be slightly soft but not squishy. If it’s squishy, then an avocado has gone beyond the point of no return, and it won’t be good to use for this salad.

Bacon Ranch Pasta Salad

Pasta salads are a prime candidate for a party. They’re filling, they feed a lot of people and they’re generally enjoyed by everyone too. Since Ranch dressing is a favorite for many people, it makes sense to try using it in a pasta salad too. The addition of bacon and ranch to this pasta salad makes it really delicious!

🛒 Ingredients Needed:

  • tricolor rotini pasta
  • bacon
  • mayonnaise
  • dry ranch salad dressing mix
  • cider vinegar
  • garlic pepper and garlic powder
  • milk
  • tomato
  • sharp cheddar cheese
  • canned sliced black olives
  • fresh parsley

  • Cook the pasta according to package directions. Drain, rinse under cold water, and drain again.
  • Meanwhile, cook the bacon in a skillet over medium-high heat, turning halfway through, until crisp. Transfer to a paper towel-lined plate to drain; crumble.
  • In a very large bowl, stir together the mayonnaise, ranch dressing mix, vinegar, garlic pepper and garlic powder. Stir in the milk until smooth. Add the cooked pasta, crumbled bacon, tomato, cheese and olives to the bowl; toss to coat. Chill, covered, at least 1 hour to allow the flavors to meld. If the salad seems dry after chilling, toss with a little more milk, as needed. Garnish with parsley.

➡️ Tips and Substitutions:

  • Tri-color rotini works for this salad, and it lends a lot of color to the salad. But you can certainly change things up and use a similar pasta such as penne or fusilli.
  • If you don’t want to cook your own bacon, it’s okay to use Real Bacon Bits instead.
  • Change up the cheese that you use in this salad. Gouda or Jack cheese might be good choices.

✔️ Make Ahead and Storage Tips:

Store the bacon ranch pasta salad in the refrigerator promptly after making it. Mayo-based salads are perishable due to the mayo content, so they should not be left out at room temperature for more than two hours to avoid the risk of foodborne illness. You can store this salad (or make ahead) in the refrigerator for 2 to 3 days.

German Potato Salad

If you’re looking for a potato salad to make and serve that is not too heavy, this is the potato salad to make. It’s very easy to make. It’s traditionally served warm instead of cold. But you can always serve it at room temperature if you don’t want to serve a warm dish.

  1. Place potatoes and 1 tablespoon of salt in a large saucepan; add water to cover by 1-inch, and bring to boil over high heat. Reduce heat to medium and simmer until the potatoes are tender, about 10 minutes. Reserve ½ cup ot the potato cooking water, then drain the potatoes; return the potatoes to the pot and cover to keep warm.
  2. While the potatoes are simmering, cook the bacon in a 12-inch skillet over medium-heat, stirring occasionally, until brown and crispy, 5 to 7 minutes. Using a slotted spoon, transfer the bacon to a paper towel-lined plate; pour off all but ¼ cup bacon fat. Add the onion to the skillet and cook, stirring occasionally, until softened and beginning to brown, about 4 minutes. Stir in the sugar until dissolved, about 30 seconds. Add the vinegar and reserved potato cooking water; bring to a simmer and cook until the mixture is reduced to about 1 cup, about 3 minutes. Off heat, whisk in the mustard and pepper. Add the potatoes, parsley and bacon to the skillet and toss to combine; season with salt to taste. Serve warm.

➡️ Tips and Substitutions:

  • Make sure you toss the potatoes in the skillet with the bacon drippings while still warm. That will help the potatoes absorb the flavor.
  • Substitute Yukon Gold potatoes for the red potatoes, if desired.
  • Ham or sliced apples are sometimes added in to a German potato salad.

✔️ What is the difference between regular potato salad and German potato salad?

American potato salads are typically mayonnaise-based. German potato salad is tossed in a vinegar-based dressing made with bacon drippings. It is usually served warm instead of cold, but some people prefer to serve it at room temperature.

This is my newest favorite salad of the summer. It has all of the good things that you want in a seasonal salad. Juicy, red strawberries are added in… and they’re pretty amazing paired with salty feta cheese and bacon. The easy-to-make, homemade strawberry vinaigrette is the perfect dressing for this salad too.

To a blender jar, add the red wine vinegar, shallot, honey, Dijon, strawberries and salt. Process until smooth, about 30 seconds. With the blender running, gradually drizzle in the oil, processing until the vinaigrette is smooth.

Drizzle vinaigrette over the salad, and serve immediately.

➡️ Tips and Substitutions:

  • Substitute chopped chicken for the bacon. Or leave the bacon off the salad to make this a vegetarian salad.
  • Use gorgonzola cheese in place of feta.
  • It’s okay to use red cherry tomatoes in place of yellow.

Greek Salad with Seasoned Flatbread

This Greek Salad is a delicious salad to make when you’re looking for something to serve with grilled meats. It’s one of my favorite salads because I enjoy a salad with a simple vinaigrette (like this one), and the flatbread accompaniment is nice to have too.

Ingredients needed for the Greek Salad:

  • olive oil, red wine vinegar and garlic (to make the simple dressing)
  • romaine lettuce
  • cherry tomatoes
  • red onion
  • cucumber
  • feta cheese

How to make the Seasoned Flatbread:

The “flatbread” for this recipe can be made from flat lavash bread, but it can also be made with regular pita bread. If you use pita bread, you’ll just split it in half to create flat pieces of bread. The bread is brushed with a simple red wine and lemon vinaigrette and then toasted in the oven for a few minutes until crisp.

This Greek Salad is such a simple salad recipe. The vegetables are lightly dressed with a 3-ingredient vinaigrette. It has tasteful additions of crumbled feta cheese and kalamata olives. And that crispy flatbread is delicious to much on in-between bites of salad.

➡️ Tips and Substitutions:

  • Use red or green leaf lettuce in place of Romaine.
  • I used crumbled goat cheese here, but I actually prefer to buy a chunk of feta and cut it into cubes. It’s so much better that way!
  • Make this salad ahead of time! Prepare the flatbread and the dressing early in the day or even the day before. Then it’s all ready to go whenever you assemble the salad!

  2. The flatbread is super easy to make, and it’s a nice side to the Greek salad.

PREPARE THE FLATBREAD:

  • Preheat oven to 400°F. Line a baking sheet with parchment paper; place the bread on top. In a small bowl, whisk together olive oil, vinegar, lemon peel, and garlic. Brush the mixture evenly over the lavash (or pita); sprinkle with oregano. Season with salt and pepper. Bake until golden and crisp, 5 to 10 minutes. Break into pieces.

PREPARE THE VINAIGRETTE:

  • In a large bowl, whisk oil with vinegar and garlic; season with salt and pepper. 

ASSEMBLE THE SALAD:

  • Put all salad ingredients in a bowl and toss with the vinaigrette. Serve with the toasted flatbread.

Everyone needs this Old Fashioned Macaroni Salad recipe on hand to make for barbecues and potlucks. This is a great, classic macaroni salad recipe. It’s the best! I’ve included a video included showing you how to make it, as well as the full recipe card at the bottom of this post.

Old Fashioned Macaroni Salad

My mother made a similar version of this simple, classic macaroni salad recipe. It has always been my favorite. I don’t want anything fancy in my macaroni salad, so the simplest version works best for me. You must begin with the small noodles with the hole in the middle (otherwise known as ditalini). I suppose you could use small elbows too, but I personally love the little guys!

What makes this the best macaroni salad?

Have you ever tried the macaroni salads that they sell in the deli section at your grocery store?  They’re over-slathered with a thick mayonnaise dressing, and the flavor is just not there.  It tastes like it is mass-produced because it is! Yuck! Making this Old Fashioned Macaroni Salad at home is infinitely better.  You can control the amount of dressing you add to the salad.  It’s totally your preference whether you like it heavily dressed or not.  And it turns out 100% more delicious than store-bought macaroni salad.

  • mayonnaise (low fat mayonnaise is fine)
  • celery and green onions
  • mustard
  • onion powder
  • salt and pepper
  • hard-boiled eggs

✏️How to make Old Fashioned Macaroni Salad:

  1. Prepare the pasta according to package directions. Rinse under cold water and set aside to drain well.
  2. In a medium bowl, whisk together the mayonnaise, celery, green onion, mustard, onion powder, salt and pepper.
  3. Place the drained, cooled pasta in a large bowl. Add the mayonnaise mixture and stir into the pasta until well combined. Gently stir in the chopped egg. Sprinkle with paprika, cover with plastic wrap, and chill for at least a couple of hours before serving.

➡️Recipe Tips:

  • Hold back a little of the mayonnaise mixture and experiment with how wet you want your salad. If you have any leftover, save it. You may want to add the rest right before serving depending on how much has been absorbed by the macaroni.
  • Make sure NOT to overcook the macaroni. It only gets softer in the salad and you don’t want it to be a mushy mess. 😉
  • Feel free to add an extra egg or two if you’d like.
  • Some people like pickles in their macaroni salad. That’s not for me, but I certainly think they would work, so go ahead and give it a try.

✔️What to serve with Old Fashioned Macaroni Salad:

  • My Old Fashioned Macaroni Salad is perfect to serve at a party or barbecue. It makes an excellent side to to burgers and hot dogs.
  • This salad is also a great accompaniment for grilled chicken or steak
  • Add some sliced watermelon and corn on the cob to one of those, and you have a super easy complete meal!

★How to Store:

Macaroni salad will be fine when kept in the refrigerator for up to 3 days. Then it’s probably time to throw it out. Be careful when serving at room temperature. It’ll be fine at room temperature for a couple of hours unless it is in a very hot environment. Be sure to toss your macaroni salad if it’s been left out at a party for more than 2 hours. It likely won’t be safe to keep for leftovers.

❤️Why I love this recipe:

  1. Even though I make a slightly different version than my mom did, I love that every time I make this salad it reminds me of summers spent on the lake with her.
  2. I like to make this salad when we have company coming over. It’s a sort of summer staple that everyone loves and it makes a lot.
  3. I love that this salad is always a hit. I’m not the only one who likes things a little on the old fashioned side!

Grape Salad

Have you ever come across a grape salad? It’s kind of a Southern thing. There may be other versions, but the Southern version is a cold salad with cream cheese mixed in, plus brown sugar and chopped pecans sprinkled on top. It’s often served as a side dish for holidays and pot lucks. But since it’s so sweet, it can be served as a dessert too.

  • seedless green grapes
  • cream cheese (it’s okay to use reduced fat)
  • white sugar
  • sour cream (it’s okay to use light)
  • vanilla extract
  • brown sugar
  • pecans (you can leave out the nuts, if you prefer)

  3. In a separate bowl, stir together the sour cream and vanilla. Add this mixture to the cream cheese mixture, and use the mixer to blend together.
  4. Stir the creamy mixture into the grapes. Sprinkle brown sugar and pecans on top (do not stir them in).
  5. Cover, and chill overnight before serving.

  • Rinse the grapes under cold water and pat them dry with a paper towel. Make sure they’re clean before using them in the salad.
  • Granola sprinkled on top of the salad (in place of the nuts) is an option too.
  • If you want to create a broader variety of grape salad, add in some sliced strawberries and blueberries!

Make Ahead Tips:

For the best taste and texture, chill the grape salad in the refrigerator for at least an hour before serving. This allows the flavors to meld together. Grape salad is best served fresh on the same day it’s made. If you have leftovers, store them in an airtight container in the refrigerator and consume within a day or two.
