Here’s a recipe for a Monte Cristo, which is a twist on the popular croque monsieur French sandwich.

This sandwich has special meaning to both my husband and me. We have been to France several times, usually for an anniversary or another special occasion. One of our favorite things to do is to sit at a French cafe, drink wine and sample the local eats. I always order the Croque monsieur, and it’s fun to see how it is prepared differently in each cafe. One thing is always the same: it’s always delicious! The monte cristo is similar to the croque monsieur, but it’s always served with jam. So when I’m in the United States and I see a monte cristo on the menu, I always order one- yum!

Ingredients Needed:

  • milk
  • eggs
  • kosher salt and freshly ground black pepper
  • unsalted butter
  • white bread
  • turkey
  • ham
  • Swiss cheese
  • powdered sugar
  • red currant jelly

How to make a Monte Cristo:

  1. In a shallow bowl, lightly whisk together the milk and eggs. Season with salt and pepper; set aside.
  2. For each sandwich, lightly butter 3 slices of bread on both sides (using 1 tablespoon of butter). Place two slices each of turkey and ham between 2 slices of bread. Top each with 2 slices of cheese, and then top with the third slice of buttered bread. Trim the crusts off, secure with toothpicks, and cut in half on the diagonal.
  3. Melt 2 tablespoons of butter in a 12-inch nonstick skillet over medium-heat. Dip the sandwich halves in the milk mixture to coat. When the butter foams, place the sandwiches in the skillet and fry until golden brown on the bottom (about 2 minutes). Add the remaining 2 tablespoons of butter to the skillet, turn the sandwiches, and fry until browned on the other side (about 2 minutes more).

Recipe Tip

The recipe calls for using Red Currant Jelly (that’s the classic way to eat a Monte Cristo). And you can use the leftover to make my Jelly Twinkles or my Red Currant Thumbprint Cookies. However, if you don’t want to buy red currant jelly just for this recipe, the sandwich is perfectly delicious with raspberry jam or strawberry jam too.

To serve, sprinkle the Monte Cristo with powdered sugar, and serve with jelly.

The History of the Monte Cristo:

The exact origins of the Monte Cristo sandwich are somewhat unclear, but it is believed to have been popularized in the United States in the 20th century, particularly in California. One version of the story attributes its creation to a French chef at the Moulin Rouge restaurant in Los Angeles in the 1920’s, although others argue that it evolved from the croque-monsieur (a grilled ham and cheese sandwich) or similar European sandwiches.

The sandwich gained widespread popularity in the mid-20th century, especially after it was featured on the menu of the Disneyland restaurant Cafe Orleans in the 1960’s. Since then, it has become a beloved comfort food, often served in diners and breakfast spots, with variations that include turkey, chicken, or even a combination of meats. Another variation is the croque madame, which is served with a fried egg on top.

✏️ How to make Hot Hawaiian Beef Sandwiches:

  1. Preheat the oven to 350℉.
  2. In a small bowl, whisk together mayonnaise and a desired amount of hot sauce (to taste) and stir until smooth.
  3. Spread the mixture evenly over the bottom half of the rolls in the dish. Lay the roast beef on top of the spread. Lay the cheese slices over the roast beef, overlapping them as you go. Place the other half of the rolls on top and set the pan aside.
  4. In a small saucepan, combine the butter, lemon pepper, mustard and Worcestershire. Heat the mixture over medium heat until it’s melted and bubbly, then spread it evenly over the tops of the rolls in the pan.
  5. Cover the dish with foil and bake the sandwiches for 12 minutes. Then remove the foil, and bake until the tops are deep golden brown, 2 to 3 minutes more. Run a knife between the sandwiches to cut through the slices of beef before serving.

➡️ Tips and Substitutions:

  • Substitute sliced deli ham for roast beef.
  • For an Italian version, use pepperoni, salami and provolone.
  • I like to make several pans of these for a party. I prep them a few hours ahead of time in “throw-away” pans. Then they’re easy to pop into the oven before your party and during the party too. It’s easy clean up with the throw-away pans!

I like to have these displayed at a party with plenty of appetizers like chicken wings and bean dip. Also make your favorite potato salad, macaroni salad and brownies for dessert!

Regular sandwiches get rather boring, don’t you think? Open faced sandwiches are fun and unique. We like to make them for dinner once in a while just to change things up. This sandwich is delicious with smoky grilled eggplant. It’s definitely not the kind of sandwich you see every day, and that’s why we love it!

  • fresh basil
  • red wine vinegar
  • eggplant
  • olive oil
  • French bread

How to make Grilled Eggplant Open Faced Sandwiches:

In a small bowl, combine the chopped tomatoes, chopped fresh basil and red wine vinegar. Season the mixture to taste with salt and pepper. Set aside.
 
Preheat the grill to medium-high heat (or preheat broiler). Brush 6 eggplant slices lightly with olive oil (reserve the remaining eggplant for another use). Brush the bread lightly with olive oil. Grill the eggplant and bread until golden, about 4 minutes per side for eggplant and 2 minutes per side for bread.
 
Arrange the bread slices on plates. Spread the goat cheese on top, dividing evenly. Top with the eggplant slices and season with salt and pepper. Using a slotted spoon, mound the tomato mixture on the eggplant, spread to cover and serve.

The Lobster Roll is a New England specialty. It’s a favorite that you’ll see made all different ways. I like mine fairly simple. I want to taste that wonderful lobster with just a couple of flavors to enhance it.

Our family used to spend part of our summer in New England- specifically– Boston’s South Shore. It was a family tradition to head to our beach house rental every summer… a time of relaxation, searching for sea glass, family bonding, visiting with our favorite beach house neighbors, and eating plenty of lobster. We’ve been unable to keep that tradition going (for now). Eventually, we’ll get back to it. I miss my lobster! One night of our vacation was always reserved for steaming several lobsters in a big pot on a gas-fired device. And with the leftover lobster meat, we always made these lobster rolls!

How to make a Lobster Roll:

In a medium bowl, mix the lobster, mayonnaise, salt, pepper, lemon zest and juice. If you like a more creamy lobster mixture (to be more like a lobster salad), it’s okay to mix in a little more mayonnaise. I like to keep it light. The lobster is delicious all on its own!

Divide the lobster mixture between two toasted buns. We like to butter our buns and then toast them. If you live on the east coast, you can locate New England style hot dogs buns and use those. On the West coast and everywhere else, just buy the buns of your choice. Serve immediately, and enjoy!

Lobster rolls are excellent served with wedges of lemon, for any desired extra squeezing. And you must serve with chips or fries, cole slaw and a cold beer. That’s the New England way to do it!

They are easy enough to make at home. And although lobster can be pricy, you will most definitely be able to make lobster at home for a better price than paying top dollar in a restaurant. You can buy lobster meat online, or steam your own lobster at home. Go for it!

These Crunchy Chicken Salad Wraps are made with a delicious, light chicken salad recipe, and then they’re all wrapped up in low carb flour tortillas!

It seems like I’m always on some sort of quest to lose weight. I’ve tried all the diets. They all work, but they don’t all work long-term. So I’ve resorted to just eating smartly. What I mean by that is that I eat a light breakfast such as my copycat Starbucks egg bites and a light lunch. Most days of the week, I eat a lighter dinner too. I exercise every day. And then there’s plenty of wiggle room for going out to dinner and enjoying more delicious foods when the mood strikes!

These crunchy chicken salad wraps are a recipe I make for lunch pretty often. Sometimes I skip the tortillas and just eat them in a lettuce wrap instead. I love the crunch from the cucumber and celery.

Warm the tortillas in the microwave to make them a bit more pliable. Divide and layer the lettuce and chicken mixture on the tortillas.

In a large bowl, use an electric mixer to combine the cheeses, half and half and spices. Beat on medium speed until well mixed. You can add additional half and half if the mixture is too thick.

To assemble the sandwiches, spread half of the bread slices with the prepared spread. Arrange the cucumbers on top of the cheese, and top with the remaining bread. Press down slightly, trim crusts and cut sandwiches into triangles, thirds, or circles- any shape (big or small) that you’d like.

At good bakeries, they will slice loaves of bread for you- as thin as you’d like. Or you can buy thin-sliced sandwich bread. I like to use whole grain bread for this recipe, but you can certainly use any variety that you’d like.

These Chicken Salad Sandwiches are a delicious sandwich choice for company. And they’re great for everyday too.

I’m such a big fan of chicken salad- especially this one. The sweetness of the grapes combined with the crunch of nuts and celery and cooked chicken all mixed together in a tangy and delicious curry mayonnaise dressing is wonderful. It happens to be awesome served on a roll to make chicken salad sandwiches.

  • chopped, cooked chicken
  • seedless grapes (I like to use red grapes)
  • celery
  • almonds or cashews
  • mayonnaise
  • lemon juice
  • curry powder
  • soy sauce

How to make Chicken Salad Sandwiches:

In a medium bowl, combine chicken, grapes, celery, and almonds; mix well.

In a separate bowl, mix the mayo, lemon juice, curry and soy sauce. Stir into the chicken mixture a little at a time until you reach your desired creaminess. Chill, covered, for 2 hours or longer. Why is there a chill time? The chill time gives the flavors in the chicken salad a chance to meld. It’ll be more tasty if you can give it some time in the fridge first.

When ready to serve, add the chicken mixture to rolls (if you’re eating it as a sandwich). I actually like to make this sometimes and just eat the chicken salad without any bread at all. You can also spoon the chicken salad mixture into lettuce to make lettuce wraps!

How to make cooked chicken for chicken salad:

If you don’t already have some cooked chicken, marinate 2 chicken breasts in the refrigerator in a mixture of olive oil, lemon juice, garlic, salt and pepper for 1 hour or longer. Bake at 400 degrees for 30 minutes. Cool slightly, chop and add to the salad. It will be delicious!

This is the Best BLT sandwich, prepared with a spiced-up, special mayonnaise.

These are perfect for a quick and easy weeknight dinner. They’re good for lunch too, but they’re really substantial enough to make for dinner too. We love making our BLT Wraps (which utilized sun dried tomatoes instead of fresh tomato), but these are really the best BLT sandwich so we make them often!

  • bread (your choice)

What’s an easy way to make bacon?

When a recipe calls for cooked bacon, I always make my bacon in the oven because it’s so easy to do. There is very little clean-up or mess involved. Preheat the oven to 400 degrees F. Line a baking sheet with foil. Lay the strips of bacon on the foil. Bake until the bacon is browned and crispy, 15 to 20 minutes. Time in the oven will depend on how thick your bacon is. Let the bacon cool and drain on a paper towel lined plate.

How to make special mayonnaise for BLT’s:

Fixing up mayonnaise for BLT’s might seem like a silly thing to do in making the best BLT sandwich, but it really does make a difference! In this recipe, you’ll combine your favorite mayonnaise with extra virgin olive oil, freshly ground black pepper and minced garlic. Refrigerate until well chilled.

Spread all 8 slices of the toasted bread with the mayonnaise (amount is your preference). Layer bacon, tomato and greens on 4 slices.

Suggestions for changing up the recipe:

  1. Use a different kind of mayonnaise. There are so many kinds of mayonnaise on the market now, so feel free to use your favorite or try something new. Dijonnaise might be good! 
  2. The bread you use will make a difference. Choose something you like! If you want to make it homemade, my Tomato Basil Bread is awesome to use for BLT’s.
  3. The type of bacon you choose to use can make a difference in the flavor too.
  4. In the summertime, use heirloom tomatoes!

The Italian Grilled Cheese is a bumped-up, flavorful version of making a grilled cheese sandwich with an Italian twist.

Grilled cheese is just about one of the best comfort foods on the planet, especially when paired with tomato soup. You’ll see various version of grilled cheese on restaurant menus, and we sure love a good grilled cheese around my house too. This Italian grilled cheese sandwich is a little twist on my adult grilled cheese sandwich recipe. It’s a great sandwich to make for lunch!

  • sliced Italian bread
  • butter
  • cream cheese
  • prosciutto
  • red or yellow tomatoes (or both!)
  • fresh basil
  • provolone cheese

How to make Italian Grilled Cheese:

Spread the butter on the bread slices. Turn over and spread the other side of one slice with the cream cheese.
 
Heat a skillet and place the cream cheese slice butter-side-down in the pan. Layer the prosciutto, tomato, basil and provolone on top of the cream cheese. Top with a 2nd slice of bread, butter-side-up.
 
Cover, and heat the sandwich on low until lightly browned. Carefully flip and toast the other side.

Remove to a cutting board. Let sit for a couple of minutes, then cut with a serrated knife and serve immediately.

Some may argue that it isn’t a grilled cheese sandwich anymore if you add all these additional ingredients to it. I beg to differ! It’s absolutely a grilled cheese. It’s just jazzed up with more flavor, and made to be so much more delicious!

Change things up by using different cheeses. Use sun dried tomato spread instead of fresh tomatoes. Brush some white wine on the inside of the bread instead of cream cheese. Make your Italian grilled cheese the way that you would like it best. It’s easy to adjust the recipe to your liking. Enjoy!

These BLT Wraps are a unique, easy twist on the classic BLT that’s perfect for Game Day or any day!

There are so many different reasons to make these, easy, 5-ingredient BLT Wraps. They’re good for lunch. Either eat them at home or tuck them into your kid’s lunch. They’re fun for a party served as appetizers on a platter (people always appreciate a more substantial choice at a party!) And they’re fun for serving at a Super Bowl or tailgate party too.

How to make BLT Wraps:

The first step is to make sun dried tomato mayonnaise. Simple combine mayonnaise with chopped sun dried tomatoes.

Spread the mayonnaise on a flour tortilla, leaving a border around the edge. Sprinkle chopped iceberg lettuce on top.

Then sprinkle on cooked bacon.

How to cook bacon in the oven:

Since this recipe calls for cooked and crumbled bacon, you’ll need to do that ahead of prep time. It’s easy to make it in the oven. Preheat your oven to 400 degrees F. Line a rimmed baking sheet with foil. Lay the bacon on the baking sheet. Don’t overlap the bacon or it will all stick together! Bake the bacon for 15 to 20 minutes, until crisp. The time varies depending on how thick your bacon is. Move the bacon slices to paper towels to drain. Then crumble for this recipe.

Roll up the tortillas tightly, careful to keep the fillings inside. Grab a couple of large-sized picks. Cut the wrap in half on the diagonal and secure each half with a pick. This recipe makes 16 BLT halves- perfect for a big bash.

Make-Ahead Instructions:

Since tortillas tend to be fairly sturdy, making these BLT Wraps the morning of your party is perfectly fine.  Assemble them and stack them on a tray, wrap the tray well with plastic wrap, and take them out when they’re ready to be eaten.

I’ll admit, I could sit down and eat quite a few of these.  That creamy, sun dried tomato mayonnaise mixed with the bacon and lettuce is really quite delicious.  There are ways to lighten-up BLT Wraps if you’re concerned about that. Use whole grain or fat-free tortillas, light mayo, and turkey bacon. Regardless of how you prepare these, they’re going to be a welcome addition to any menu. Enjoy!
